Set your IP address changes in /etc/network/interfaces.  Example:

# The loopback network interface
auto lo
iface lo inet loopback

# The primary network interface
auto eth0
iface eth0 inet static
    address 192.168.1.100
    netmask 255.255.255.0
    network 192.168.1.0
    broadcast 192.168.1.255
    gateway 192.168.1.1
    dns-nameservers 8.8.8.8 8.8.4.4

Then restart networking. If that gives you trouble reboot the machine.

sudo service networking restart

or

$ ifdown eth0 && ifup eth0
